Scrambled eggs w/spinach in a tortilla

Grilled mushrooms and onions optional ( up to 1 cup of each)

Pan cooked spinach 1 – 2 cups with salt and pepper to taste

In a separate pan scramble 2 eggs and 2 egg whites (without oil)

Once everything is cooked, mix together and serve on a medium whole wheat tortilla (or glueten free substitute)
